Wow what a proud moment for me. For those of you who dont know ive been practicing BJJ since i was 30, however 5 of those years (as of recent) were lost due to the opening of my business, The PLANdemic, and straight up EXCUSES. In Jan of 2023 i decided to get back on Mats and pick up where i had left off 5 years earlier. . Well doing it at 45 years of age proved to be a much more difficult task than I had expected. I suffered 3 terrible injuries within just a few months of training. Being a hobbiest, owner of a company, husband, and now proud DAD i was questioning if i could do this, if i could get back to where I was. For those that know ME they know that when I put my mind to something NOTHING will stop me. I just took it one day at a time and applied all my attributes, mental and physical tuffness etc to my jiu-jitsu journey and here I am. This is a small accomplishment on a long road with no end in site. I want to thank @carl0s_rosado for being instrumental in my development. I have known Professor for over 10 years. He gave me my purple belt while he was still a brown Belt. He embraced my obsessive/compulsive ways LOLOLOL with his patience and grace as he helped me privately back then and has been there for me since my return. Here is a play on Mussels. As mentioned in my introduction we took a batch of mussels and smoked them in hickory and applewood. Then we took those mussels amd folded them into our San Marzano concasse tomato. We also smoked our mussels to open them in their shell and dredged them in our sauce! Here is a beautiful well composed dish i did at a 10 course tasting a while back. I learned something similar when i was down in Charleston South Carolina at Zero. This application is clearly reflective of spring. We have taken spring plants from the garden amd re-created them in the form of food using micro veggies from California, a mushroom duxelle as our dirt and house made phyllo cup as our pot to house those veggies!!! Good evening ladies, gents, here is a dish from our last 10 course tasting back in February. Here we use a french pastry called Feuille de brick. The crunchiness obtained through this pastry is unprecedented. He we’ve piped our pheasant confit into the cylinder. We have a delicious apple gelee ontop bringing bright hits of sweetness amd acidity. The ashes we created from dehydrating some mushrooms and running through our food processor. Lastly we have our 24k edible gold to really make the aesthetic of this dish POP! I learned a similar application staging at Zero in Charleston SC. Join us this Saturday for another 10 course dinner.

Happy day foodies and followers. On Saturday we held an exquisite 10 course tasting. Here is course 1 of 10. Our oysters were sitting on a bed of sea weed. Underneath that seaweed we had dry ice which we poured hot water on to create this beautiful smoking effect. Our oyster had a little surprise on the bottom. It was a disc of passion fruit and the oysters were then topped with sirracha lime pearls. The balance between sweet, salt, spice, and acidity made for a perfect cohesive 1 course. The hickory and apple wood smoke added another dimension to to the layers of flavor that had already been created. We finished this with a U-10 Scallop and some UNI-Roe!! DELICIOUS!

Here is a dish that reflects our company name. Warm sesame crusted feta with wild berry and passion fruit jelly. Then we made some vanilla flavored pop rocks using a molecular gastronomy technique. The design to this dish was SPECTACULAR as was the flavor. When creating an 8 course menu the structure is incredibly important. This was the perfect way to start off our multi course experience for the evening!

For our surf we utilized our sea urchin shell as the vessel for our Ora King Salmon which was tossed in herbs and curried horseradish. Our turf was our domestic wagyu from Snake River Farms. We mixed our tartare with a miso sauce, herbs, and topped it with our Uni. Our house made phyllo cups are the perfect vessel which added the right amount of texture to this dish. GM everyone for those who dont know much about my culinary backround, here is a fun fact. I failed the baking part of the culinary curriculum when I was in school! Lmao. I an NOT a robot. Foodies and fam how the hell are you??? Here is a very straightforward dish we did several weeks back. Although its not edgy it is delicious. As you all know zero shortcuts are ever taken with our preparations. This braised short rib (off the bone), roasted garlic mash, fig brûlée. Our demi is made from veal bones, shallot, port and red wine. Our demi takes days to make and is then fortified over and over again to create other sauces. All it does it get stronger and stronger. Our short ribs are braised btwn 6-8 hrs and melt in ur mouth. And mash if not executed properly can be awful. We cook our potatoes in cream and butter then run them through a ricer to achieve the smoothest fluffiest texture known to man. Lol JK! Simplicity at its finest! Hello Foodies. Here is a dish that is widely discriminated against and gets lots of HATERS and the funny thing is most of those HATERS have never even tried CURRY. I learned from my client nonetheless, how to make AUTHENTIC curry. The key to an authentic curry is u have to BOJAY your spices and get your spices from a quality source or provider. Then its one of those things where it cooks all day and blows ur palate and ur mind 12 hours later. Here we have a coconut curried chicken dish with authentic rotii, dates, tarragon, finished in toasted coconut flakes!! Dont knock it till you try it!!! This dish was OUTSTANDING!! I will never forget the first time I cooked it for my clients in Seaford (Rick and Kim). I then posted it and for the next 10 months I could NOT get it off the menu, LITERALLY! Every client that had seen that photo had to have this dish on their menu and for good reason. Good afternoon Ladies and Gents. I absolutely love this time of the year for many reasons. As for the obvious its food. Im a HUGE wine and cheese guy. However, our artisanal cheese boards are NOT your ordinary cheese boards. The cheeses I choose to select is done strategically and for good reason. What we pair it with is dictated by whats in the market. Here we have brulee figs, grapes, cornichons, dried fruits, homemade jams, and a honey assortment. I also put out our homemade chicken liver which is ALWAYS a crowd favorite even to those who DONT like liver. Once they try it they are hooked. No detail goes unseen. This is a real WOW factor and a must have at your next event!

Good morning everybody. So here is a dish I did a few weeks ago. As fall is upon us (my favorite season to cook in) i wanted to incorporate some of the beautiful seasonal flavors. Here we have our U-8 diver scallops, apples butternut squash puree, candied bacon slab with our lime foam. Foams are really fun and create a wow factor. There are many different ways to achieve a foam. Pending on which method you use it will provide a different foam. Here we used something called foam magic which gave u a nice “lacey”. The acidity from our lime foam created the zing that this dish needed to form a beautiful cohesive balance.

Ladies and gentlemen our event on Sunday was more than just an ordinary dinner. We were on the upper east side of NYC Memorializing 9-11. Although without question one of the darkest times in history, my clients take this day to give tribute to all those who lost their lives and risked their lives to save other fellow Americans. We rolled out with a cocktail hour style of execution showcasing a seafood display, artisanal cheese board and several delicious passed hor doeuvres. What an amazing event! Very grateful to have been instrumental in making this day a huge success.

Good evening Ladies amd Gents. Here is a dish we did many weeks back. The ingredients in here are kinda straight forward, but the complex flavor profile is anything but that. So we have a wild mushroom creme. Not all mushrooms taste the same nor are they even close in price if your using high end fungi like i am in this application. With mix of mushroom in the creme are porchini, miatake (hen of the woods) and beech. They have been sauteed with shallots, garlic, fresh thyme, flambee with a little champagne and cream shery wine. We have paired this sauce with our homemade tortellini whose stuffing is straightforward (ricotta parm) and finished the dish off with our star, CHANTERELLE! Stay tuned for more food porn

Hope everyone had a great labor day!! We had our biggest event to date on 9/3. As a Chef, throughout my career I’ve done TONS of events like this as the Executive Chef for other companies. It’s these experiences along with a plethora of others, which enabled me to crush this event with flying colors. However, none of it could had been done without the right team. Im very proud of the way my team pulled together and made this day possible. This was an engagement party for 95 people with a full blown cocktail hour, a sit down dinner with chef action station and a fully equipped outdoor kitchen that I had to design and put together. The organization and work load that went into this was incredible. I want to thank my entire team for helping make this event a massive success. Happy Wednesday ladies and gentleman. Its mid week and we are one step closer to this weekend. Here is a DELICIOUS dish I did several months back that I want to share with you. Every dish I compose is well thought out and is strategically assembled to ensure maximum WOW factor!!! Here we have our King Salmon tartare which has been tossed with a little whole grain mustard, horseradish, cornichon and dill. There is a touch of mayo to bring it all together. For added texture and depth of salt we have topped it with our homemade parm tuille and a tartare is NO tartare without it’s BF the Runny Quail egg! Good afternoon everybody. So a couple of weeks ago we had a wonderful family BBQ that we hosted for a client. Although we specialize in high end fine dining, summertime calls for many outdoor events/BBQ’s. We elevate everything we do. For this event I created an entire make shift kitchen outdoors by ordering a convection oven and everything else needed to make this party go as smooth as possible. We used ice sculptures to highlight our seafood and a beautiful display created by my assistant Natalie. I’m not a fan of shaffing dishes as I feel these are class-less,tacky, old etc. We used many different vessels to highlight our food! The guests loved everything. Like always this was a total TEAM effort. Stay tuned for this upcoming Saturday’s event as we have another, which is going to be 3 times the size of this one. No party is too big or too small for Sabor de Arte!

Good evening ladies and gents. So here is an authentic Ecuadorian cerviche that was passed on to me by my wifes family. I’ve tried cerviche’s from all over the world and it’s “my opinion” this one TRUMPS them all. I love to add a little bastmati rice to absorb that delicious fresh cerviche liquid. And whats cerviche without a little crunch. The plaintains and maiz (concha) add this texture that my palate craves as I eat this dish. Don’t forget the cilantro as that finishes the cohesive balance on the palate!

Happy Sunday everyone. Yesterday we had a 6 course dinner for 18pple which was a HUGE success. We started our 6 course tasting with our Wild King Salmon tartare/ horseradish/ cornichon/ dill/ lemon zest/ soft poached runny egg yolk/ coral reef. There were guests attending the event that did not eat seafood but were willing to try this. BLOWN AWAY is what they were to say the least. There are so many elements here that make this dish outstanding. The fattiness of the salmon, acidity and crunch of the cornichons not to mention our coral reef creating the perfect crunchy vessel, and that horseradish to add a little ZING. Cant forget that Beautiful runny egg yolk adding another layer of richness. Give us a call if you truely want to know what great cohesive food tastes like!!

One of my primary motivating factors for creating the art I do is being able to take the stigma out of food. Here is our Rabbit Sausage SMOKED table side with garlic lemon dressing, herbed crostini and micro leeks. As usual the dish that was anticipated to be the least favorite was actually THE STAR of the night. Being a creator of food is not easy. Good morning everyone. Here is a photo of a dish done about 2 months ago. We have our A5 American Wagyu from Snake river Farm. We’ve gone ahead and paired it with a mushroom cippolinni tower, and potato foam using a little molecular gastronomy. On top we have a white potato tuile. The Wagyu’s flavor if so pronounced and lucious all it needs is a little Maldon Salt and cracked black pepper! We are absolutely slammed for the summer. Good morning everyone here is a new dish we ran this weekend. This was a delicate dish however the flavors really danced off our clients palates. This is Wild caught Chilean Sea bass, sherry wine creme, dill oil. Chilean sea bass is known for its undertone of sweetness which is why out cream sherry creme complimented it perfectly. The dill oil not only added vibrant color but brought beautiful aromatic notes and freshness to every bite. Lastly we seared it to add a crunchy element and texture to this dish.
